- Or my Kathrein UFS 910
adapter (both have HDMI)?
Are there qualitative differences, the prices fluctuate so massive.

the price for an HDMI cable says unfortunately only very limited about its quality. Apparently there are many synonymous overpriced products that are cheap quality, but at a high price to be sold. I would make a famous brand, whose price appears realistic to me.
