You can go to lawyers umhören what of "saving clauses" hold ... Fact is, in any case: you have to do is (orally or in writing) an agreement to meet, what needs to be done and what the cost. To be quite simple. Much more, it does not. If I'm going to say: "I make you a nice little film for EUR 1,000" and you say: "Yeah, but please do this" - then we have already signed a contract.
