Whether you can change the Camera, depends of the HDV Camera from - the cheaper models is not, in some professional equipment of course very well.
And I would basically Vegas with the output to HDV 1080 50i do if I come of 50i material - or to HDV 1080 60i, 60i of when I come forth. The project settings in Vegas should always s.die properties of the source material may be adapted so that the preview is optimal.
