hello only once,
I have tried several programs and'm somehow dissatisfied I get a very good quality, if I have to 195MB per minute RESTRICT but then the videos unermäslich large in 1 hour then I need about 12GB! and the next lower level would then 14MB per minute but the quality leaves something to be desired. What could you do? or is there any hidden features or any additional plug-ins which I did not. I am grateful for each replied

There are pretty much all the basics, including the relationship between file size, codec and quality explains.
Only so much:
Rule of thumb: The bigger the file, the lower the compression, at least better the quality. As with soup, the more water added to dilute the more the taste fader.

But you need more space than any compressed objects, but each program can do and the Quallität is always the same (the supply of the Cam). These are referred to approximately 12 GB / hour and that is a 1:1-copy verbatim what comes of the camera.
So something in an additional (!) Hard drive to invest.

what camera is actually?
it is a DV camera, then it is no preference which program you take.
the dv-stream via firewire always delivers the same quality. Of course this is very big. so do you work but only cut your video together and give it as divx / xvid or dvd in and then did a very good quality.
