Standard Options / filter when converting DV -> MPEG2?

Hello Slashcam community!
I have been a few days old to Video8 and Hi8 tapes to digitizer. The video material I recorded in DV (AVI) format. Now I have already purchased my dedicated 250GB hard drive in my own custom NAS system (where I store the raw material) is almost full.
So should I just start the file size slightly reduced. As I plan the video material on DVD later to capture, is the target format to MPEG2 well. I have had since ES (video + audio) in the eye, because I like working with MPEG2Schnitt.
Now I have at the moment, however, not very much time with me every day extensively Video intensively to employ, to say the best filter to apply and configure, etc. (my knowledge in the field is limited arg anyway:))
Therefore, I would like to MPEG2 files, preferably in a state to which later an acceptable finishing is possible.
Should Heise: The filter / Options necessarily apply to you when you first convert should apply, but nothing more. I guess times that a de-interlace offers more useful options generally beneficial, I know, however, no longer.
I hope my question is not too incomprehensible formulated. Thank you in advance!

I would not do what the source material to heavily modified (deinterlace) if you have the raw data not want to cancel. I thought mpeg2 for dvd is basically always interlaced. gruß cj

Mir is a question: What filter / options should it be that when you convert MPEG2 should apply?
